- ▢2 small uncooked chicken breasts, approx 360g
- ▢3.5 cups chicken stock (low sodium)
- ▢75g uncooked lean smoked back bacon (fat removed), diced small
- ▢1 shallot, finely diced
- ▢2 cloves of garlic, minced
- ▢½ cup (120ml) of 2% milk
- ▢½ tablespoon lemon juice
- ▢175g of laughing cow light (or can use light cream cheese)
- ▢½ tablespoon of cornstarch
- ▢1 teaspoon of dried parsley
- ▢1 teaspoon of dried chives
- ▢1 teaspoon of onion powder
- ▢½ teaspoon of dried dill
- ▢½ teaspoon of garlic powder
- ▢500g potato gnocchi
- ▢60g of cheddar, grated (do not use pre-grated)
- ▢olive oil spray
- ▢salt and black pepper
- ▢fresh chopped parsley (or spring onions or chives)
Instructions
- Add chicken to a saucepan with 2 cups of stock, bring to a boil and simmer for 10-12 minutes until cooked. Remove, allow to cool slightly, and slice.
- Spray a frying pan with olive oil and fry the bacon until golden and crisp. Set aside.
- In the same pan, fry the shallot until softened, then add garlic and cook for 30 seconds.
- Add remaining stock, milk, lemon juice, herbs, seasoning, and laughing cow cheese. Whisk until melted and smooth. Add cornstarch mixed with water to thicken the sauce.
- Add chicken, gnocchi, and bring to a boil. Simmer until gnocchi is cooked and sauce thickens. Adjust seasoning with salt and pepper.
- Transfer to an ovenproof dish, top with cheddar, and broil until cheese melts and is lightly golden.
- Sprinkle with bacon and chopped parsley, then serve!
